A classic hot chocolate made with pantry essentials beats any combination

I’m only half joking that I became a husky because I was raised in Russia. The sight of fresh snow is so dizzying that I want to stop everything and, with apologies to my colleagues, enjoy the magic and serenity of a world covered in pure white. I want to do it with a steaming cup of hot chocolate in hand.

My 9-year-old son agrees that hot chocolate with mini marshmallows is ideal after a fun winter’s play. In his youth, Avi preferred to mix things up. But this winter, when we were delighted that it snowed twice in one week in January, he decided that my simple homemade version was his platonic ideal.

The recipe takes just a few minutes and requires only three ingredients (other than salt): milk, cocoa powder, and semisweet chocolate. Since there is no added sugar, you may think at first that the cocoa isn’t sweet enough. As you continue to drink it, the sweetness increases, but it never gets boring.

First, warm the milk (whole milk, low-fat, or plant-based) in a saucepan while stirring in the cocoa and chocolate. (You can use dark chocolate, bittersweet chocolate, or milk chocolate, depending on your preference, but I think semisweet produces a better classic hot cocoa taste.) Salt to bring out more flavor. Add a pinch of and bring the mixture to a boiling point.

In just a few minutes, you’ll have hot chocolate that’s different from packaged mixes. It doesn’t take much effort to make.

If marshmallows aren’t your thing (don’t tell Avi), but you want to add a little spice, add a pinch each of ground ancho chile and cayenne pepper for a throat-warming adult beverage. (And if you want something richer and more decadent, we have a few other options from our archives.)

A winter storm is the perfect excuse to treat yourself to a cup of hot chocolate, but the only non-negotiable is how you drink it. Hold the mug in both hands, inhale the pleasant aroma, and savor each sip. You might not even care if it’s snowing or not.
